Isomaltulose

PRODUCT INTRODUCTION:

  • Isomaltulose is white crystal, odorless, sweet, about 42% sweetness of sucrose, pure sweetness, basically the same as sucrose, no bad aftertaste;
  • The melting point is 122 ~ 124 ℃, which is much lower than that of sucrose at 82 ℃;
  • Acid resistant, heat-resistant, not easy to hydrolyze (20% solution still does not decompose when heated at 100 ℃ for 60min at pH 2.0, and sucrose can be completely hydrolyzed under the same conditions);
  • The thermal stability was lower than that of sucrose;
  • Reducibility is 52% of glucose;
  • Soluble in water, the solubility in water is lower than that of sucrose, 38.4% at 20 ℃, 78.2% at 40 ℃ and 133.7% at 60 ℃.,and 85% of sucrose at 80 ℃.
  • The viscosity of its aqueous solution is also slightly lower than that of sucrose of the same concentration.
  • This product can be enzymatically hydrolyzed in the intestines and absorbed by the body. It has little effect on blood glucose and does not cause dental caries.

PHYSICAL CHARACTERISTICS:

1. digestion and absorption of isomaltulose
Isomaltulose is not digested by saliva, gastric acid and pancreatic juice until it is digested into glucose and fructose in the small intestine.
Because the structure of isomaltulose is similar to sucrose, it is decomposed into glucose and fructose after digestion and directly absorbed and metabolized, so there is no food safety problem.
2. inhibition of fat accumulation
According to the latest research report, the mechanism of obesity is that lipoproteinlipase (LPL) in human adipose tissue is activated by insulin, so that LPL rapidly absorbs neutral fat into adipose tissue. Because isomaltulose will not cause insulin secretion after digestion and absorption, it will not cause the activation of LPL activity. Therefore, the presence of isomaltulose makes it difficult for oil to be absorbed into adipose tissue.
3. no tooth decay
Isomaltulose cannot be utilized by oral cavity causing microorganisms, and of course, it will not produce insoluble Polydextrose. Therefore, no dental plaque will be formed. Cause tooth decay and periodontal disease. So it won't form cavities. Therefore, isomaltulose not only does not cause tooth decay by itself, but also has the effect of inhibiting tooth decay caused by sucrose.
4. diarrhea prevention effect
Isomaltulose can be slowly digested and absorbed by the human body because it is completely decomposed and absorbed in the small intestine. Therefore, it will not cause diarrhea. The results of human test showed that the direct intake was up to 80g. It also has no diarrhea effect at all. This is very different from general sugar alcohols. It can be used as a safe sweetener. It is used in all kinds of candy, beverage and food.

APPLICATION:
Isomaltulose is a low sweet sweetener. It has a very good taste and can be used in candy, low sweet drinks and food. It can be used alone or with sucrose.
It also has a very good effect of shielding odor.
For example, it can mask the fish oil flavor of DHA, the odor of vegetable juice and the beany flavor of soybean milk.


MACHINING CHARACTERISTICS:
1. excellent taste
Isomaltulose tastes very similar to sucrose, mild and delicate. There is no bad taste during and after eating. Its sweetness is about 42% of sucrose.
2. humidity stability
Isomaltulose has very low hygroscopicity, so it has free flow in instant powder. Because of its low caking risk, it can be easily made into beverages or other types of products.
3. viscosity
The viscosity of isomaltulose is almost the same as that of sucrose
4. solubility
At low temperature, the solubility of isomaltulose is only about half of that of sucrose, and when the temperature rises, it is close to that of sucrose.
5. acid stability, which is conducive to maintaining equal osmotic pressure
Using isomaltulose, adding 1.5%~15% citric acid to mix, keeping warm storage, no invert sugar was produced after 22 days. These characteristics indicate that isomaltulose is more stable than sucrose for foods containing organic acid or vitamin C.

For example, in sports drinks, isotonic properties can be maintained during storage within the shelf life of the beverage (the osmotic pressure is equal to the osmotic pressure of the fluid in the body). The pH of sports drinks is low, generally close to PH3. Adding sucrose to such drinks is easy to decompose into glucose and fructose, resulting in an increase in the number of permeable active particles and undermining the osmotic pressure balance. Isomaltulose is not easy to decompose under acidic conditions and is an ideal substance to maintain osmotic pressure balance
