Maltitol is a disaccharide made by hydrogenation of maltose obtained from starch. maltitol powder occurs as a white, crystalline powder containing small amounts of sorbitol and related polyhydric alcohols.  Maltitol is made of super-high malt syrup with nickel catalyst through heating, pressurizing, hydrogenating and crystallzing. Maltitol is obtained by hydrogenation of maltose. It is an earlier sugar alcohol used in low-calorie sweeteners. There are two products: one is a colorless crystalline product; the other is a colorless viscous liquid. There are other maltitol powders, which are made by spray-drying maltitol. The other indicators are the same as liquid maltitol except that the moisture content is ≤0.1%.The hemiacetal hydroxyl of maltose is reduced to hydroxyl and converted to maltitol. The sweetness is increased. The relative sweetness is about 0.9 times that of sucrose. The taste is pure and close to sucrose, but it is not digested or metabolized by oral microorganisms.
