Maltitol is obtained by hydrogenation of maltose. It is an earlier sugar alcohol used in low-calorie sweeteners. There are two products: one is a colorless crystalline product; the other is a colorless viscous liquid. There are other maltitol powders, which are made by spray-drying maltitol. The other indicators are the same as liquid maltitol except that the moisture content is ≤0.1%.The hemiacetal hydroxyl of maltose is reduced to hydroxyl and converted to maltitol. The sweetness is increased. The relative sweetness is about 0.9 times that of sucrose. The taste is pure and close to sucrose, but it is not digested or metabolized by oral microorganisms. Causing dental caries, it is a non-calorie food sweetener, especially suitable for patients with diabetes and obesity.
